Ok I know that title doesn’t make sense. How can a pizza not have cheese but still taste cheesy? Seems all kinds of wrong doesn’t it?

First let me start out by saying – Hi, my name is Amber and I have a pizza addiction. I love pizza!!! I really do. I love  everything about it except for the cheese part. My body just doesn’t like it all all. It makes me feel horrible after I eat it. Of course when I started finding out what happens to cows in the dairy industry I really had issues with it. Needless to say I have spent some time looking for alternatives. Up until now I have been using some vegan cheese or Moxy Cheese on my pizzas. Dont get me wrong – those were great . But I wanted something a little more cheesy.

To do this I turned to one of the most amazing foods I know- the raw cashew.

The raw cashew is pretty amazing if you didn’t already know. It has this magical way of adding  an almost cream like, cheesy flavor taste to any dish. I use raw cashews in tons of my recipes to replace cheese (thus making it sooo much healthier for you). Need an example? This dip and this dip both get rave reviews, and this alfredo sauce was the deal breaker when it came to getting my husband on board with eating better. All of these recipes are awesome becasue of the raw cashew!

Of course since I was looking to really amp up the cheese flavor I added one of my other food loves- Nutritional Yeast

Ok here is where it gets super simple. All I did was put 1/2 cup of Whole Raw Cashews  and 1/4 cup of Nutritional Yeast in my Nutribullet
and pulsed it a couple of times. I then added in 1/2 tbsp of dried basil and 1/2 tsp of dried oregano. I pulsed it again 2 more times. It came out looking like this.

The really cool thing about a Nutribullet  is it can take things like nuts or seeds and turns them into anything from a coarse chop to a powder ( like it did here).  I know it doesn’t look super impressive, but when I sprinkled this cheesy powder over the top of my pizza in place of typical cheese I was blown away with how good it was. Even my husband who is a southern born man really liked it. If you were not born in the southern states of America you might not get what that means, but basically it means he is a meat and potatoes kind of guy, loves his cheese and all things deep fried.(You can imagine how thrilled he was when I started changing our diet!!).

Alright so you know how I made the topping, let me show you how I like to build the rest of the pizza! My thought is if I was going to take away the meat and cheese on my pizza I needed to add some really other great things back to it. I wanted to look at my pizza and say- “That is impressive looking!” Afterall we eat with our eyes too, so keep that in mind as you try new things.

First I made my dough. I used this recipe and used the dough cycle on my Breadmaker .Once it was ready I split it in half. If I was making a large pizza I wouldn’t have. But I wanted to use Cast Iron Skillet to bake it in. I love cooking in a cast iron skillet, it just makes things come out  tasting differently than in regular pans! It is hard to explain but if you have ever cooking in one you know what I mean.

I pressed the dough down into the skillet.

Next I added the pizza sauce. Need a super cheap pizza sauce recipe- try this one! 

Then I loaded up on toppings! I always put my spinach on the bottom layer of toppings so it doesn’t burn in the oven.

I sauteed some onions and mushrooms while the dough was rising so I added those next.

Then I thought just to make it pretty I would add some tomatoes that I grew on my Tower Garden this year.

The last step before going in the oven was to add the topping! (if you missed the recipe , its in the above paragraphs)

I got a little overzealous with my cheesy topping, try not to make a mess like I did! I had some topping leftover that I saved and put on spaghetti. It was really good so make sure you save yours  and try it on other dishes too! I baked it in a preheated oven at 450 degrees for about 12 minutes. All oven vary so just keep an eye on yours so it doesn’t burn. The tomatoes will keep it really moist and a little runny so keep that in mind if you add them. I will tell you , this may not look like the prettiest meal and my photography skills do not do it justice but it is really tasty! If you are looking for a healthier alternative to the typical loaded cheese  and meat pizza this is one you should try out for sure!

It is the little tweaks you can make in life that will add up to  bigger changes in your life ( like replacing the cheese and pepperoni in the typical recipe with an alternative that fits my families dietary choices better). I really encourage  you to look at your life and find some places you can make these changes.

  1. That looks amazing!!! I recently found the whole ‘cashew’ thing and LOVE it!!! I have a jar of the ‘cashew’ cheese in my fridge that I use on spaghetti and such. So yummy!
