Awesome Veggie Burger @ Adventures in Mindful Living

 

I have been looking for a good veggie burger for awhile. When we used to eat hamburger my mother in law would fry us these huge hamburgers and oh my they were soooo good. Unfortunately they were really not good for us and as my health problems and my husbands started to increase we knew we needed a change. We wanted to be around for our kids so as you all know , we made a pretty major change in our eating habits and reaped the benefits by losing a large amount of weight ( I lost around 40 pounds and He lost around 75 and is still going) and had major improvements in our health.

Well that was all great and dandy and I am glad we did, but man every once in awhile I really just wanted a good burger. I knew there had to be a really good veggie burger recipe out there that would satisfy that hearty hamburger craving I had.The beauty of the internet and having lots of friends  is that you don’t have to struggle with something by yourself. I knew I didn’t have to come up with a good one (not to say I won’t in the future), I just had to ask around and find one. By asking around and I found a couple of good ones but when I saw this one on one of my friends FB pages , I knew I had to try it!

I had all the ingredients so I whipped some up for lunch and had one of my picky eaters (AKA- my husband) try it out. He was real quiet and then said- “Hey these are pretty good! I like these, you should definitely keep this recipe.”

I followed the recipe but I seared mine in a little bit of coconut oil just to get a little bit of a crunch and texture on the outside.You don’t have to and I know it takes away from some of the healthiness, but to really satisfy that craving of a fried burger thats what it needed. Instead of a bun ( because I knew I would eat 2 of these) I put mine on a bed of crunchy romaine lettuce . I sliced up some onion and mushrooms and sauteed them a  little with a small amount of coconut oil ( there was some left in the pan after the burgers were done) with some garlic salt and pepper. I also loaded up with tomatoes and of course ketchup and mustard!

I have had people ask me if I make every plate of food look good when I eat it and the answer is I sure try! We eat with our eyes first, so I always recommend you take the time and make it look pretty when you make this veggie burger! A lot of taste and our perception of things is in our minds! If you want to make a change you have to start there first!

This veggie burger will never taste exactly like a greasy hamburger, and thats ok!  But it will satisfy that craving I had with a healthier alternative!! By making some mindful choices everyday you can start your journey to better health too, it really is worth it!
