Biscuits and Gravy Recipe

One of my goals with this website is not just to give you healthy plant based recipes (which I try to do the majority of the time) but to show you that switching over to a plant based diet is not as hard as it may seem, and that even if you don’t want to go to a full blown plant based diet you can work in plant based meals easily into your life. One of the biggest misconceptions is when people decide to go plant based, or vegan/vegetarian is that all you can eat is salad and tofu. While I love salad, and even some tofu in some very limited meals it is not all I eat. What I actually eat is very far from that. This breakfast idea of biscuits and gravy is a demonstration of that.  There is no meat in this meal and the milk I use is almond milk (original flavor). While it is not a super healthy meal by any means it is still better for you than the meat version, so why not give it a try?

First a little back story about me and gravy.

Gravy used to be the one breakfast food I just couldn’t get right. It didn’t matter how many times I watched someone else cook it, or someone patiently tried for the 20th time to tell me how to make it, I just couldn’t get it to come out right. The problem was my husband loved biscuits and gravy. It was his favorite breakfast and I couldn’t make it. I started to get a complex about gravy. I even called it my arch enemy. I was a little dramatic about it but the harder I tried to make it the worse it got. His mom could make it like a pro, which was great when we lived with her for a little while. He could have his favorite breakfast and I didn’t have to cook it. That went well until we moved into our own place and she wasn’t there any longer to make it for him.

I had pretty much given up on the idea of being good at making biscuits and gravy, until one morning a couple of weeks ago. I had already made breakfast. We had homemade biscuits and I had fried up some Gimme Lean Sausage for sausage biscuits. Everyone was happily munching away and I noticed the grease in the pan where I had made the sausage. My first thought was that this really wasn’t the healthiest breakfast I had made this week (I fry the sausage in a little vegetable oil) but then my second thought came. I wonder if I could make gravy using that grease. Since everyone was already eating I thought why not? If it is bad I will just throw it out. No stress. I thought back to all those times I had watched my mother in law make gravy and just went for it. The great news is it came out really good. My husband told me this was my best biscuit and gravy recipe yet, and with each try I have gotten better and better at it.

Gravy Recipe

Ingredients:

  • Gimme Lean Sausage
  • Almond milk (or other non dairy milk of choice)
  • All purpose flour- this is just what I always had on hand. I don’t honestly know if you can use another kind of flour. If someone does let me know how it comes out.
  • Salt and pepper- you will be seasoning it to your liking
  • A cup full of water- to use in cause you gravy gets to thick, or in case you get thirsty
  • Vegetable oil- you want just enough to cover the bottom of your pan so the sausage won’t stick

Start by putting your vegetable oil in your pan. The oil will start to shimmer when it is hot enough. Fry your patties on each side for a few minutes. Follow the directions on the video from there!

I don’t measure out any of my ingredients I just eye it and use a little. You can always add more if needed but taking away is a lot harder! That is why I loaded the video on here to help with any questions. The amount you use will depend on several different factors. I’ll try to explain them as we go through the recipe. After you take the patties out you are going to add your flour to the hot leftover grease. You want o add just enough that it soaks up all the grease, continually stir this flour and grease mixture around in the pan. You don’t want it to burn. When the mixture starts to turn brown then you will add your nondairy milk. Just pour it right in the pan. You want to add enough to fill up the bottom of the pan. Whisk it continually the whole time you are doing this. You want to whisk out the lumps of flour that you will see. If you watch the video you will see this step better. If the mixture starts to get too thick and paste like add a little bit of water. Just keep whisking and adding milk to thicken and water to thin until you get it to the constancy you like. Season with salt and pepper to your taste preferences. You can let it cook for a few minutes which will also help it thicken up. Cut open your biscuit and pour some gravy over it. Serve and enjoy!

The sausage patties you made earlier make really great sausage biscuits or crumble a few patties over your gravy and biscuits.
