Bomb-Diggity “Bolognese”, A Hearty and Healthy Meal!
Whenever I have a bottle of red wine in my house I make this hearty and healthy meal. It is so easy and so good it is ridiculous. I love that it can be tweaked so easily to what you have in the fridge. For example it calls for diced eggplant, and I never have eggplant. So I just use a little more zucchini. Same thing with the tempeh (which I didn’t even know about till I made this recipe), if I don’t have it then I just leave it out or add a little more of a veggie. If you are looking for a hearty meal that wont make you miss the meat, you should give this one a try!
