I told you last week that I get asked all the time for just some quick, easy and healthy meal ideas. That is why I started this series! Last week I shared this idea. This week I wanted to share one of my new favorites- Loaded Cheesy Potato! (Yes it is healthy- just keep reading)
What I do is the night before I make this meal and I double the mexican cheese recipe.
The next day I make baked potatoes in the crock pot just to keep it easy. I steam some broccoli ( I do mine on the stove but there are ones you can do in the microwave). After the baked potatoes are ready I cut them open, put the steamed broccoli on top and then cover it with this mexican cheese recipe. Easy as that!!
This would be great as a meal on those crazy busy nights and you could even pack this for a lunch if you had a way to slightly heat it up! I have packed just the cheese in a small bottle and stopped at a drive through to get just a plain baked potato. The heat from the baked potato heated the cheese up and I had a decent meal.
