Cheesy Broccoli and Rice Soup- a healthier version of your old favorite one!

Cheesy Broccoli and Rice Soup (dairy free)

I love cheesy soups that are easy to make. This one has become a regular in our household so I wanted to share it with all of you! For all my Shred 10 friends this recipe falls in line with that!!

Cheesy Broccoli and Rice Soup

Ingredients:

1/2 cup of raw cashews

2 TBSP of Nutritional Yeast

2 garlic cloves

4 cups of vegetable  broth

4 cups broccoli steamed and rough chopped

2 cups of cooked rice

Directions:

In a blender put your cashews, garlic cloves. nutritional yeast, and however much of the vegetable broth you need to make your blender be able to blend everything till nice and smooth. If you have an older blender you might have to let it blend for a minute, stop and then blend again.  Once that mixture is nice and smooth pour it and whatever vegetable broth you have left in a pot. Next put the remaining ingredients in the pot and bring to a simmer. Serve and enjoy! If you are looking for ways to make this meal a little more convenient and easy, there is rice and even broccoli that you can make in the microwave. I usually have rice and steamed broccoli leftover from another meal so I just use that up. Measurements on the broccoli and rice don’t have to match up to mine, If you have leftovers just use them up. This would also be a good soup to add any other veggies you like. Just experiment around and find what works for you and your family!
