Cheesy Roasted Veggies! A delicious way to eat more veggies!

 

This is one of those dishes that you find yourself craving after you have it one time!  When I made this I found myself standing over the pan eating it and wishing that everyone else in the house would think it was gross so I could eat all of it. Yes I capitalize on the fact that sometimes my family thinks what I am eating is weird, it lets me keep some yummy dishes all for myself. This one was just way to good to keep to myself though and I had to share with them and all of you!

This is one of those super easy recipes that is easy to adjust to the size of your family. You simply make as little or as much as you need!

Ingredients:

Tomatoes, mushrooms,and asparagus

salt,pepper, and some garlic powder

oil of your choice

Panko bread crumbs

Follow Your Heart Gourmet Blend Mozzarella Cheese Shreds 

Directions:

First you are going to want to cut up your veggies and put them in a big bowl like the picture below. For today’s recipe I used mushrooms, tomatoes,and asparagus.

Drizzle a little olive oil, coconut oil, or whatever oil you like to use over all the veggies.Sprinkle some salt , pepper,and some garlic powder over them next.  Stir the veggies around so that they get coated with the oil and all the seasonings.

Dump out on a pan and cook in a preheated oven at 450 degrees for 15 minutes. I cover the bottom of my pan with tinfoil for easy clean up.

After that take them out of the oven and sprinkle some Panko breadcrumbs over the top. I like Panko becasue it gives it a good crunch. Next sprinkle some Follow Your Heart Gourmet Blend Mozzarella Cheese Shreds over the top of that. Use as little or as much as you want. I really like mine cheesy so I like to load it on! Once are done covering the veggies in the cheese put the pan back in the oven for another 10 minutes or long enough for the cheese to melt.This is what mine looked like when it came out of the oven.

Just looking at the picture makes me hungry! If you are looking for a delicious and cheesy side dish then you should really give this one a try!
