Cocoa Granola Crisp Recipe! A healthy way to eat chocolate for breakfast! Adventures in Mindful Living

We love our usual granola recipe ( find it here) , but I knew I had so many readers that either didn’t like peanut butter or had some allergies to it. When I went to go and look for my old granola recipe that was PB free I couldn’t find it. My solution? Come up with a new one. Of course I called my in- house granola specialist  to help me. In case you don’t know who that is, it is my oldest daughter Sydney. She has been making granola for years for me. I think it was actually one of the first things she cooked my herself.

This is the recipe we came up with. It is so delicious! When Sydney had some for breakfast this morning she told me it reminded her of cocoa puffs cereal. Yes we did used to eat that stuff on occasion. We sat around trying to figure out what to call this amazing granola recipe but just couldn’t agree on a name. I asked our readers on facebook for help naming it and my Aunt Judi actually came up with the name we liked the best.Thank you Judi!

I want to mention here too that this recipe came out differently than we thought it would. I think that is part of the fun in trying to create your own recipe, you really never know how it is going to turn out till the very end and you are tasting it.We were trying for another recipe like our original that we could ball up like big cookies or make into bars. This turned out more like a loose granola recipe. We enjoyed it this morning like a cereal with some great almond milk, but it is also good just a quick snack. I think it would be really good over some yogurt! ( We love So Delicious dairy free yogurts) . If yogurt isn’t your thing sprinkling this over some ice cream (make your own  like we did here or here) or even some cut out fruit like strawberries would be great!

 

Cocoa Granola Crisp Recipe-

Ingredients:

2  1/2  cups of rice krispie type cereal

2 cups old fashioned oats

1/2 cup 100% Maple Syrup

1 Tbsp of coconut oil ( melted)

1 cup sliced almonds

1 cup vegan chocolate chips (less if you don’t want a super chocolatey  recipe)

Preheat your oven to 250 degrees fahrenheit. Mix all the ingredients together in a large bowl.Line a baking sheet with tin foil ( this makes clean up super easy) and then pour the mixture out onto the tin foil covered baking sheet. Put in your preheat oven for 25 minutes. Take the pan out ( be careful it will be hot). Carefully stir the mixture. All the chocolate will melt into the mixture and it will become completly covered in chocolate. Spread the mixture back out onto the pan and put it back in the oven for another 15-20 minutes. Keep an eye on it becasue you don’t want it to burn.( It will start to smell like chocolate chip cookies in your house at this point.) After the time is up take out the granola and let it cool on the pan for a couple of minutes. Then comes the fun part- eat it!! Once ours is completly cool we store it in a ziploc bag.

  1. Yum…thank you for reminding me about homemade granola! I need to get my buns in the kitchen and cook up some stuff because I have been eating way too much processed foods again.
