Healthier options for your toppings

 

I love baked potatoes. When I decided to get healthy I thought I would have to give them up. After doing some research I found out I didn’t! Potatoes are healthy, what I put on top of them was not. Simple fix – Find some healthier options other than butter and salt to top my potato with!

                                         Here are some of my favorite new healthier options for toppings!

Chili– this is our favorite way to eat baked potatoes now. It is such a hearty meal that you walk away feeling very stuffed and satisfied. (We use this recipe for our chili)
Onions, Peppers, and Mushrooms– this is really easy. Simply cut up your vegetables you want to use and stir fry them a little till they reach the tenderness you prefer. Cut open your baked potato and pout the vegetable over it. If you don’t want to use oil to stir fry your vegetables you can also use a little water or vegetable broth.

Salsa-I love my husband’s salsa and it is a perfect healthier option for topping a baked potato! Want the recipe? Click here for it!

Mexican fiesta– take the salsa recipe from above and add in some cooked black beans,corn, and colored peppers (raw or cooked- your choice). Heat it all together for a few minutes and then use as your topping! If you wanted to get really creative you could take the ingredients from these enchiladas and use them as toppings instead. Pour a little enchiladas sauce over it and you would have a killer meal!

Soup- I make up a big batch of soup and sometimes instead of just having a bowl of soup I simply heat up a small amount and pour it over a baked potato.

Easy Vegetable soup

Another thing I love to do with baked potatoes is make them twice baked potatoes. It is a great way to add in more veggies to an already great veggie! Tomorrow I will share my favorite recipe for Twice Baked Potatoes!

  1. This is a great list! I love potatoes but drastically limit eating them due to high starch. Great way to make a potato more of a low cal meal. Sharing with my folks on f-book.

  2. I love baked potatoes, and had one today. I love that they are so versatile, I had mine with some ground turkey I seasoned, and topped it off with some cheese. I love the idea of chili with them, have to remember this next time I make chili. Followed you here from A Little R&R link up.

I love the idea of topping baked potatoes with onions, mushrooms and peppers; a zesty salsa; or vegetarian chili. It’s always a pleasure to visit your blog.
