Easy Mexican Crock pot Casserole
I already shared one of my favorite sweet treats in the crock pot so now I want to share one of my favorite super easy meals.Easy Mexican Crock pot Casserole is one of the easiest and cheapest meals you can make. When one of my new friends posted this for MMM link up I knew I had to make it becasue you literally just threw everything in the crock pot and hours later you had an amazing tasting meal.
If you can double the recipe (I have a big crock pot so I could) go ahead becasue throughout the week I am going to show you how to make 2 more meals out of your leftovers that are extremely tasty! That’s right- I will show you how to make this one meal and turn it into 3!! I LOVE meals like that becasue they not only cut down on your cooking but they help you stretch your dollar big time!!
I served our first meal over some great salad mix and tortilla chips. I topped it with salsa for a little added kick! It reminded me of a taco salad when we ate it this way.
