Jeremy’s Mango Salsa @ Adventures in Mindful Living

 

My husband travels every couple of months for his job. The last time he went he came back raving about this mango salsa he had in a restaurant.  I heard over and over again over the last couple of months how much he really liked this stuff. Jeremy doesn’t usually go on and on about food so I started to get curious about this mango salsa too. He came home one day last week with all of the ingredients for his salsa plus a mango. I knew he would create something amazing- he always does.

Lucky for me and you- I wrote it down so I could share this easy and healthy treat with all of you!

Helpful tip for this recipe- Here is a great video that shows how to cut and diced a mango.

 

 Jeremy’s Mango Salsa

Jeremy’s Mango Salsa Ingredients:

  • 12 Roma Tomatoes (diced)
  • 1  Mango (peeled and diced- see video from above)
  • 1 Red Medium Onion (diced)
  • 1 White Medium Onion (diced)
  • ½ Jalapeño Pepper (Leave in the seeds for heat)
  • 1 Bell Pepper (Green, Orange or Red)
  • ½ Cup fresh Cilantro  (chopped)
  • 1 ½ TBS Cumin
  • 1tsp Salt
  • 1 Clove of Garlic (smashed and finely diced)
  • A pinch of Black Pepper

 

You can make this in the food processor if you don’t feel like chopping everything up.

Otherwise simply diced and chop all the ingredients up and mix well. Let it sit in the fridge for a couple of hours so the flavors can marry.

Serve it with tortilla chips and cut up veggies for a healthy and satisfying snack!
