Easy Leftovers Soup!

We make this recipe for Easy Mexican Rice almost every week! When I make that meal I always have leftovers. My husband is not a huge fan of leftovers , but I am because eating them stretches our food budget. So I love to find meals I can just add to the leftovers a little and get a different meal. This is one such meal!

It is really easy and this is one of those meals that you can look through your fridge and use up anything else you think would go well in it!

Directions-

Saute some mushrooms and onions up in a little olive oil or water if you are plant based. If you don’t have any, don’t sweat it. Just look through your fridge and see what you do have that needs to get used up. Colored peppers, onions, or mushrooms work really great in this.

Once your onions and mushrooms (and whatever else you put in), dump in a can of diced tomatoes into your mushrooms and onions.My local Aldis has some crazy good fire roasted diced tomatoes that I always have on hand. I also had a can of corn that I drained and dumped in the mushroom and onions. Again if you don’t like corn or don’t have any, don’t worry. This is not a recipe that you have to follow to the tee!

Next dump in your leftovers from this meal. Stir it all up. Now add enough veggie broth (or whatever broth you have) to cover everything. I usually add about 4-5 cups to mine. Bring it to a simmer and then serve it up and enjoy it!
