Peanut Butter Quesadillas

This is a fun new spin on the typical peanut butter sandwich! It is easy to make and very easy to tailor to what your family likes. For this one I used peanut butter, bananas and vegan chocolate chips. I have used strawberries and peanut butter in the past and it was amazing, so be creative when making yours!

You can cook these two different ways. You can cook it in the oven or a large skillet on the stovetop. The stove top is quicker but if you are making more than one the oven does a great job becasue you can cook several at one time. I will include directions for both.

If you are going to use the stove go ahead and get it warming up to 350 degrees. If you are using a skillet go ahead and turn on your stove top to medium low heat and let the skillet start getting warm. Next you are going to want to spread your peanut butter on your tortilla like I did in the picture below.

Now choose what fruit you want to use and make a layer of that on top of the peanut butter you just spread. If you want to add any chocolate chips or nuts go ahead! I am using vegan chocolate chips for ours in the picture below. Remember  be creative, but practical! Just use what your family will like!

Now put another tortilla on top of that layer of fruit and peanut butter.  If you are using the skillet you can put a small amount of vegan butter ( optional) in the pan. Place the whole quesadilla in the skillet. Press it down with your spatula to help it stick together. Carefully flip it over once  so both sides get toasted lightly. If you are cooking it in the oven place the quesadillas on a cookie sheet. If you are using small tortillas you may be able to use a 9 inch circular cake pan. You can just stake them up on top of each other if doing that. Using the oven option just keep checking on them from time to time. You just want everything inside to get warm and melty, so it shouldn’t take to long.

Once they are warmed through take them out of the skillet or the oven and let them cool just enough to make it easy to handle them. I use kitchen shears or whatever scissor I have close by that are clean to cut them in several slices.
