Pineapple Whip

I saw this recipe on Pinterest and had to try it! I love pineapple and I love yummy frozen treats, so the thought of putting them together made me very excited!

I didn’t have a fresh pineapple so I used diced canned pineapple. I drained the liquid out and saved it for later ( ok I drank it but I waited a few minute so it was kind of later) . I dumped 2 cans of drained diced pineapple in a freezer bag and stuck it in the freezer overnight. In the morning I pulled it out and put it in the food processor  with some almond milk and a little bit of sugar. I had to stop it a couple of times and scrape down the sides. I also added a little more almond milk than the recipe called for just to make it smooth. I think if I had a high powered blender I probably wouldn’t have to, but I don’t so I did!

This recipe is sooo good! Its light and creamy- perfect for cooling down on a hot summer day. I have a feeling I will be making this year round becasue a recipe this good deserves year round enjoyment!
