Super Lentil Dip

All week I have been showing you how to make several meals from this crockpot meal , this is the third meal  I made from my leftovers.First lets recap our meals so far.

First meals was the Easy Mexican Crockpot Meal (find it by clicking here).

Now on to the third meal!

By the time I made my first two meals I didn’t have a lot of the Easy Mexican Crockpot meal left. What I did have left I had mixed in some other ingredients to make the filling for the Yummy Enchiladas.I really didn’t know what to do with it until my son asked me to make one of his favorite lunches Red Lentil Taco Dip. I had everything to make it so I of course I did. Lentils are really good for you and super easy to make so I whipped some up in no time. I made his really bland becasue that is just how he likes it. After I served him and his sister I noticed I had a decent amount left. Then the lightbulb went off in my head. I mixed in the leftovers from the enchiladas filling in with the lentil dip,and BOOM! Just like that I had my third meal.

Not only did I stretch the crockpot meal but each meal I made was really delicious! It never felt like  we were having leftovers again. By the way my husband is not a fan of leftovers at all. He will eat them one time after the original meal , and then he isn’t a happy camper. But never once did he complain! He said each meal felt like a new one.

I am telling you if you need to make your food budget stretch this is the way to do it.The original meal was one of the cheapest you can make,so the fact that I could stretch it even more was really was amazing.

There is no step by step recipe. Just take whatever leftovers you have and mix it up with the Red Lentil Dip. It is that easy!! I scooped mine out with my ice cream scoop just becasue I think it makes it look pretty and we eat with our eyes first! I served ours ( Jeremy and I) over a nice green salad with tortilla chips. I had 2 enchiladas left from the night before so when I put it all together we had a great meal!

The main point of this series this week was to show you how to get creative (aka- mindful)with your meals and with your leftovers!
