Vegetable Soup Recipe
After reading so many post about making soup from your leftovers I decided to look through my fridge and my cabinet and see what I had. I am really trying to work hard on making our food budget stretch and I knew this would be a great way to do that. I found more than enough food to make a wonderful huge pot of vegetable soup! I wanted to share this easy recipe not just so you could replicate mine when you are in the mood for some good vegetable soup but also I want to always encourage you to be more mindful in your cooking. Reduce,Reuse and Recycle is not just about trash, it can also be applied to your food habits as well!
Now on to the recipe!
Vegetable Soup Recipe
Ingredients:
1 onion diced
2 cloves of garlic minced
2 red potatoes diced
1 can red kidney beans
3 cups green beans ( I was super blessed by my friend to get several mason jars of fresh from her grandpas garden green beans)
3 cups frozen mixed vegetables
1 can diced tomatoes
1 (12 oz package) frozen winter squash ( this adds not only nutrition but also creaminess)
1 cup of cooked noodles ( these were left over from spaghetti night)
6 cups of vegetable broth
1 can tomato soup (or you leftovers if you made this soup)
1. Start by sauteing the onions. You can do this with a little oil or if you don’t want to use oil saute in water. Add the garlic and potatoes and let them cook for few minutes. Stir to keep everything from sticking to the bottom of the pan.
2. Add all ingredients except the noodles. Bring to a boil and let all the vegetables get nice and cooked.Add in your noodles and let cook for a few more minutes.
3.Enjoy!
