Waffles and Ice Cream
I have shared how to have chocolate for breakfast, and cookies so you know I love a fun breakfast ideas! This one we started a couple of months ago and all of my kids love it. The best thing is it is super easy and actually really good for you! Awesome right?
Plus what kid wouldn’t get excited if you tell them you are having waffles and ice cream for breakfast? Beats cereal any day!
Ingredients:
any kind of Waffles your family likes
for the ice cream-
1 cup frozen bananas
1 cup frozen fruit (I used strawberries)
1.5 cups almond milk (or other non dairy milk)
Directions-
Super easy! Make your waffles however the directions call for. Next put the ingredients for the ice cream in a high powered blender or food processor. I used my favorite appliance the NutriBullet . Blend till nice and smooth. My Nutribullet does it in a matter of seconds, but appliances vary. If your blender is having a hard time blending it you can always add a little more non dairy milk. I like to put my ice cream in a cute little dish or bowl so they can dip their waffles in it. Using the ice cream also means that you are not using syrup so you are cutting down on your child’s sugar intake, which is always a good thing!!
Now the fun part- Dunk the waffles and enjoy!!

This looks yummy! My kids would love this with their rice ice cream. We can’t have bananas, nuts, soy, or dairy so making our own ice cream is a huge challenge. I splurge and let them have rice ice cream on occasion. But we do have a homemade waffle recipe that is gluten and egg free that is very yummy!
