One of the great things about doing cookbook reviews is I get to share with all of you some of the really great recipes from some of my favorite cookbooks. This recipe comes from one of my favorite cooks called The Reboot with Joe Juice Diet Cookbook: Juice, Smoothie, and Plant-powered Recipes Inspired by the Hit Documentary Fat, Sick, and Nearly Dead.  I LOVE this cookbook!! You all know I am a huge fan of Joe Cross and his first movie Fat,Sick, And Nearly Dead. If you have never seen it you can watch it for free here.

This cookbook is loaded with some really great recipes that are all whole food recipes. I will be sharing this recipe today and then next month during our big Fit in Fall challenge I will actually be giving away this cookbook to a lucky reader!

There are recipes for juices, salads that make you forget you are eating a salad,smoothies, soups, main courses and even recipes to use up all that pulp from your juicing! If you are working towards better health this is a great priced cookbook you should pick up! I will talk more about it when I do my review on it but lets get on to one of my favorite recipes in it!!

You will need a spiralizer  for this recipe. I love mine and I am sooooo glad I bought one!! I have a pasta lover and it is one of the things I tend to overeat on so the fact I could find a healthier alternative really made me happy. The first time I made zucchini noodles it was a little strange but the more I have made them , the better I have liked them!  Now it is just habit for me to make my kids regular noodles and make my zucchini noodles for my husband and I.

Zucchini Noodles with Fresh & Easy Herb Tomato Sauce

Noodles-

4 zucchini

2 Tablespoons of olive oil

Use your spiralizer as directed and make “noodles” out of the zucchini.

Heat olive oil in a large pan over medium-low heat. Add zucchini noodles cook until soft, about 5-10 minutes. You dont have to cook them , but it will soften them. ( I like mine cooked). Drain the noodles.

Add the tomato sauce and toss gently  to blend.

Sauce

2 Tbsp of olive oil

1 onion, chopped

10 tomatoes chopped

4  garlic cloves, chopped

1 handful of of fresh parsley, chopped

1 tsp of ground cumin

1 tablespoon dried oregano

1 tablespoon dried thyme, crushed

sea salt (about 1/2 tsp) and freshly ground pepper to taste

1. Heat the oil in skillet on low-medium heat. Saute the onion until soft. Add the tomatoes, garlic. parlsey,herbs,and salt. Simmer for 5-8 minutes.

2.Serve the tomato sauce over the noodles.

I love this meal!  I highly recommend that you try out this meal and then go get this cookbook!
