Say goodbye to Paula Deens unhealthy squash casserole and say hello to this healthier alternative!  (dairy free/ Vegan friendly too!)

One of my favorite things to do is show you how to makeover meals that you know and love and make them a little healthier. I do this by tweaking it and removing any cheese (loaded with calories, cholesterol, and other things you really don’t need) or anything else I can that may not be that great for you!

That brings me to the Cheesy Cheeseles Squash Casserole. One of my favorite side dishes used to be Paula Deen’s squash casserole. Don’t judge.

Oh my gosh it was so good! It was so cheesy and filled with butter that I could just about eat a whole pan myself. But when I decided to get a little healthier though I started thinking this would be a good recipe to do over. I am sure you will see the vegan version in November but for right now I jsut wanted to make it healthier so I could enjoy it at least once a week.

This is what I came up with!

Super easy healthier Squash Casserole!

Ingredients:

2-4 yellow squash thinly sliced

1 yellow onion thinly sliced

1 cup panko bread crumbs

1 tsp garlic powder

1 – 3 Tbsp of cheesy topping

salt and pepper to taste

Directions:

Saute the yellow onion in a small amount of oil ( or water if you are plant based) for a few minutes. next add the sliced squash. Gently stir to keep the squash from sticking or burning. You want to do that for about 10-15 minutes. You really want the squash to start to get soft and basically cooked.

(I used a oven safe pot do all of this in, but if you don’t have one  after you get your squash soft then pour all of into a oven safe dish.)

Next just sprinkle the cheesy topping over the top and stick in a preheated (375 degrees) for about 1o-13 minutes. You want the squash cooked thoroughly so just check a little in a corner. I let mine cook mainly on the stovetop so I just basically am toasting the topping when I put mine in so it doesn’t take long. If yours didn’t cook all the way through on the oven or your slices were  thick then will take longer to cook.

 I let my squash casserole cool for a few minutes then I dig in!! This with a large salad is really a great and very satisfying meal!
