Easy Zucchini Parmesan

Need an easy and healthier version of zucchini parmesan? Try this one!

Ok so I love zucchini parmesan. When I have loads of time, I really enjoy making this meal for me and my honey. But on days like this when I turn around and notice it is almost 8:00 and I am starving, I am not really up for making it. I decided to make my own version of it that was easy and only took one pot to make!

It is crazy easy to make and you could switch out the zucchini for other veggies pretty easy, so this would be a good meal to make when you are cleaning out the fridge or when you forget to go to the grocery store!!

Directions-

Preheat the oven to 400 degrees (F). If you want this to be a one pot meal then you need to find a pot that can go in the oven and on the stove eye. If you don’t have one then it will be ok, it will just be a one pot, one casserole dish meal.

Saute up some onion and then throw in some zucchini sliced up. I had a yellow pepper that needed to be used up so I diced it up and threw it in to cook too.  I  sliced up a couple of roma tomatoes (they tend to keep their shape pretty well when you cook them) and threw them in to cook with the zucchini. If you didn’t have a couple of tomatoes you could always use  a can of diced tomatoes.

You just want to cook the veggies till they are soft. Next dump in a jar of your favorite spaghetti sauce and mix it up with all of those cooked veggies.

Next you can do one of two things depending on what you have. Ill  share both the healthier route and the this is what I got in the fridge route.

Healthier route– if the pot you cooked all of the veggies in is oven safe then you can go ahead and spread a layer of this crazy goodness over it. If its not then transfer all of the veggies and sauce into a oven safe dish and then cover with a layer of this dairy free parmesan cheese. Next cover it with panko breadcrumbs. I like the panko breadcrumbs becasue it gives it a nice crunch.

This is what I got in the fridge route– if the pot you cooked all of the veggies in is oven safe then you can go ahead and spread a layer of parmesan cheese or mozzarella cheese over it. If its not then transfer all of the veggies and sauce into a oven safe dish and then cover with a layer of parmesan cheese or mozzarella cheese. Next cover it with a layer of panko bread crumbs.

Now pop that pot or oven safe casserole dish in the oven for about 15 minutes. It will be all bubbly when you pull it out of the oven so let it cool down a awhile before you dig in and devour it. If you want to boil some noodles while it cools off and then you can serve it over the cooked noodles. It is good either way!!
