Breakfast Ice Cream or Breakfast Sundae at Adventures In Mindful Living

Ice cream for breakfast, can it get any better? What if it was healthier than your typical ice cream? Why is healthier better? Well there are all of those health reasons but my favorite when it comes to ice cream is that means I can eat more of it and not feel bad!

While I was working on this recipe my son told me that if I really wanted to impress everyone at the table I should create a healthy banana split. I rolled this thought around in my head and thought of ways to make a banana split healthy. While it is not your typical banana spilt this one is still really good. It is loaded with fruit and even has a secret agent ingredient.

It is a creative way to add in foods that your child (or yourself) may not normally go for. The Secret Agent Ingredient in this recipe is pumpkin puree. If you have fresh pumpkins feel free to make some homemade pumpkin puree or you can just get the canned version. Just make sure it is just pumpkin puree not pumpkin pie mix. Sometimes they get mixed up at the store so you have to really look at what you are getting.

I am including two different directions in this post. The first one is if you have a frozen yogurt/soft serve ice cream maker. The second one is if you do not have one. If you don’t have one it will take a little more prep work but it will be worth it.

Frozen Yogurt /Soft serve ice cream maker Directions-

Get all of your ingredients out and ready. You are going to be using a blender or a food processor so get that out and ready too.

Ingredients:

  • 1 cup frozen strawberries
  • 1 frozen banana
  • 2 Tbsp of sugar
  • 2 cups almond milk (original flavor)
  • 1 Tbsp of pumpkin puree
  • ½ cup frozen pineapple (optional- if you have another kind of frozen fruit you like better give it a try! Make this recipe work for your family and your taste preferences)

Put all the ingredients in a blender and blend until smooth. If you need to add a little more almond milk go ahead. I had to stop my blender a couple of times and stir up the mixture inside. It seemed to help get the frozen fruit blended up better.

(I have made this with other non dairy milks when I was out of almond milk but we like the almond milk flavor better, but if you have a non-dairy milk you prefer go ahead and use that one)

Follow your frozen yogurt maker’s instructions on how to make it from here. In mine I just put the machine together and turn it on and pour in the ingredients in the top. When it is done follow my directions at the bottom on how to serve it.

 

Directions for making breakfast ice cream without a frozen yogurt/soft serve ice cream maker-

Here is where your steps are different than ice cream maker.  You can serve it two different ways. You can serve it like it is (very soft serve) or you can pour it in a freezer safe container and let it harden up in the freezer for a couple of hours.

If you don’t have a freezer safe container you can always use a freezer bag.

 

Before I had my frozen yogurt maker I would make this up the night before and stick it in the freezer. In the morning I would get it out and let it slightly thaw (just so it would be easier to scoop out with my ice cream scoop) and then serve it to the kids.

When the ice cream is ready you can serve it anyway you want. It’s great in an ice cream cone or if you want to really enjoy the Secret Agent Banana Split then you can serve it like we did below. Just slice a banana in half and scoop out the ice cream. Put the scoops right on top of the bananas and then get creative with what you do from there. My oldest loves almonds on top of hers, my son loves sprinkles, I love blackberries and everyone loves strawberries. The great thing about this recipe is it is a base recipe. You change it and tailor to your family and what you have on hand.
