Breakfast and I do not always get along. It is the hardest meal for me to try to come up with creative healthy ideas. I tend to just have the same things over and over again, and while that makes mornings run smooth (which I am all about), I do long to every once in a while try something new.

Here is what happens usually. I have these great ideas or I see a cool looking Pinterest post.  I gather up the ingredients, or make a run to the store to get them the day before. I get excited about making a new healthy meal for my family and then real life hits me. Something will happen and the morning will not go as planned. One of the children will get in a bad mood, the toddler will have decided to wake up at 2 in the morning and stay up the rest of the night, the cat will have knocked over a glass of grape juice on someone’s laptop or kindle or something like that. I’m sure you can add your own story here.

The story doesn’t just end there. Of course then I get stressed the rest of the morning, the toddler gets extra clingy and all hopes running back and forth to the computer to follow complicated directions for a breakfast that isn’t going as planned (because of course the printer is out of ink). Nothing is looking right at all, and halfway through you can’t remember if you put in the right ingredients in the right order or not.

Yes mornings can get like this in my house.
I am sure your mornings go better than some of mine, but we all have our stressful mornings due to a thousand different reasons. That is why I think breakfast should be easy and tasty.

This is why I like to save the more complicated meals for dinners or desserts. Not first thing in the morning.

This Pancake Puffs recipe is both easy and tasty. It is very simple, no complicated ingredients, cooking techniques or kitchen gadgets required.  As an added bonus this Pancake Puffs recipe was very easy to tailor to each person’s toppings preference.  And of course the most important thing- they tasted great!

We used the following toppings for our Pancake Puffs:

  • Almonds
  • Blueberries
  • Cranberries
  • Bananas
  • Chocolate chips

We mixed and matched those topping and tried a little of each one. The kids loved the breakfast and so did I. Add in a fruit smoothie, or some fruit (apple slices, orange slices, applesauce, etc) and you have a quick and easy breakfast. If you wanted to get really organized and ahead of the game you could even make these the night before or make a huge batch up on an easy going day and freeze them.
