Minestrone Soup in the Crock pot

This week I am at my Juice Plus conference and since it was close enough to drive too I could bring my own food, so this whole week I wanted to share with you meals that I made in my crock pot in our hotel room. This is a great way to save money while you travel and ensure you can get some great healthy food whenever you want it!

The first day we had spaghetti  and the today we had this super yummy soup! I had already diced all the veggies and put them in a gallon size ziploc bag. The drive was short enough that it was safe to keep them in the cooler packed with ice. All I had to do was open the ziploc bag and dump in all of the spices and chopped veggies. The rest was just cans and veggie broth. It was super easy to do and when we get back from a long day it is all ready for us!

I wanted to share the recipe with you so if you wanted to recreate it , you could. I had made minestrone soup before but I wanted to tweak the recipe I used and make it a little different. The recipe below is what I came up with! Everyone loved this recipe so I would count it a success!!

Minestrone Soup in the Crock pot

Ingredients:

1 Large Yellow Onion Diced

2 carrots peeled and chopped

2 celery stalks chopped

2 cloves of garlic ( you can add more if you are a big fan of garlic)

6 cups of Veggie Broth

1 Tbsp of Nutritional Yeast ( optional but if gives it a nice flavor)

2 (15 oz cans) of diced tomatoes

1/2 Tbsp of oregano

2 sweet potatoes peeled and diced

2 handfuls spinach

1 can navy beans rinsed and drained

2 Tbsp of pumpkin puree (optional- I had some in the fridge so I threw it in to up the nutritional value)

1-2 cups cooked pasta of your choice

 Put everything in your crock pot except the pasta. I used spaghetti noodles I had leftover from a previous meal. Cook in crock pot on low for 6-10 hours. You just want to  make sure all of your veggies are nice and cooked. About 20 minutes before you serve your soup add your noodles to the crock pot and let them get warmed through. Then just serve and enjoy!
